Waffles are a go to Saturday breakfast food for my family! Enjoy! Serves 6-8 waffles.

Ingredients:

  1. 2.5-3 cups non dairy milk
  2. 2 tsp apple cider vinegar
  3. 1/4 cup melted vegan butter (smart balance butter), OR homemade
  4. 1/2 tsp vanilla extract
  5. 1/2 tsp salt
  6. 1 TB baking powder, OR if corn free use this one
  7. 1 TB heaped brown sugar, OR coconut sugar
  8. 2 cups gf flour (Walmarts great value brand with xantham gum) all gluten free flours do not work the same so if you cant find this brand i recomend finding fine rice or oat flour with 1/2 tsp guar gum or psyllium husk + 1 TB tapioca starch.
  9. *I like adding 2TB vegan chocolate chips onto my waffles while they are hot as well! yummmmyy

Directions

  1. Preheat the waffle iron.
  2. Mix wet ingredients into a mixing bowl
  3. Then, mix in dry ingredients while stirring.
  4. With a beater, mix in the flour. Mixture should be thick, smooth, and drips off your spatula. Add 1/4 cup milk if batter is too thick. Repeat this step if needed.
  5. Serve with syrup, powdered sugar, and berries if desired.

    1. Yes! I froze a bunch for postpartum meals last pregnancy and it worked out amazingly! You can even reheat your frozen waffle onto a pan to get it crispy again, couple minutes per side.
