These recipes are what our family cooks when we don’t have time or energy to make fancier options. The recipes below are all super easy and most can be made in under 30 mins in one stovepot, simply be dumped into a crockpot for part of the day, or dumped into a baking dish for a up to an hour. You can find some store bought meal options at the end of this post as well; the rest of the recipes are homemade. Hope the list gives you some ideas for the next time you need a quick easy allergy friendly meal.

HomeMade Meal Ideas:

1. Spinach Chicken Pasta

I love mac n’ cheese. It is filling, gooey, and has a consistent flavor and texture. Since being dairy free, I wanted to find something that I enjoyed just as much as mac n’ cheese, but was dairy free. Since I dislike many of the non dairy cheese options, I created this recipe in hopes it would fill my craving for mac n’ cheese. It was a success. I now make this anytime I crave Mac n’ Cheese. This recipe makes about 4 servings. Takes 15-20 mins to make.

2. Beef Stroganoff

This recipe is a one pot recipe that can be made quickly. Not to mention it is super hearty. Enjoy a night of less dishes, cooking time, and yummy food.

3. Juicy Baked Chicken & Rice

This one is simple and delicious! Just bake up some chicken thighs and serve with a side of rice! The key to perfect baked chicken is the seasonings & oven temperature. See recipe for the details!

4. Buttery Pan-Fried Chicken w/ Seasoned Rice

6. BLT Sandwiches

This is my favorite lunch to eat! I make one of these at least once a week. What makes it different from other recipes is the bread and vegan Mayo that I use. Never ever have I had a better BLT!

7. Baked Nachos

These nachos are top 8 free and can be made legume and corn free depending on the toppings you choose to use! But as always, please double check ingredients of things you buy to make sure it’s safe for your family.

11. Chicken Noodle Soup

This is a super easy soup to make! Perfect for the days when someone is feeling sick. My grandma made the best chicken noodle soup growing up. It took me a while to re-create it, but it was worth the extra time and effort. Hope you like it. Serves 10-12 large servings.

Simple ingredients, strong flavor, creamy texture, easy to make, & quick to bake! What gets better than that? You should try this recipe if you want an easy casserole for your family.
