This recipe is top 9 free & can be made corn and legume free. Serves 8 servings of pudding. Takes 10-15 mins to make.

Ingredients

  1. 4 cups non dairy milk of choice
  2. 2/3 cup sugar
  3. 1/4 cup cornstarch, OR arrowroot
  4. 1 1/2 tsp vanilla
  5. 1/8 tsp salt

Optional Toppings:

  1. Store-bought vegan cool whip, OR (if legume and corn free) homemade vegan whipped cream
  2. Choice of fruit or berries

Directions

  1. In a high speed blender, mix all ingredients till mixture is smooth, not clumpy.
  2. Pour into a pot on medium low temp and continually stir the mixture, till it thickens and reaches a light boil (3-5 mins). This will help the mixture not clump.
  3. Turn off heat and refrigerate mixture in an airtight container for up to 3 weeks, or freeze up to 6 months.
