This recipe is top 9 free & can be made corn and legume free. Serves 8 servings of pudding. Takes 10-15 mins to make.
Ingredients
- 4 cups non dairy milk of choice
- 2/3 cup sugar
- 1/4 cup cornstarch, OR arrowroot
- 1 1/2 tsp vanilla
- 1/8 tsp salt
Optional Toppings:
- Store-bought vegan cool whip, OR (if legume and corn free) homemade vegan whipped cream
- Choice of fruit or berries
Directions
- In a high speed blender, mix all ingredients till mixture is smooth, not clumpy.
- Pour into a pot on medium low temp and continually stir the mixture, till it thickens and reaches a light boil (3-5 mins). This will help the mixture not clump.
- Turn off heat and refrigerate mixture in an airtight container for up to 3 weeks, or freeze up to 6 months.
