This recipe is so good. I recommend using this hard cheese for grilled cheese sandwiches, shredded on pizzas and quesadillas, Mac n cheese, and pretty much any casserole needing a cheesy flavor. This recipe will make about 16oz oz of hard cheese. Takes about 15 mins to make and at least 10 mins to cool.

  1. 1 3/4 cup oat milk (or other non dairy milk)
  2. 1/4 cup refined coconut oil OR palm shortening
  3. 2 TB agar agar powder
  4. 4 TB nutritional yeast
  5. 1 tsp salt
  6. 1/2 tsp smoked paprika
  7. 1/2 tsp garlic, if desired
  8. 1/2 tsp onion powder, if desired
  9. 1/4 tsp turmeric for color, if desired
  10. 1 tsp lemon juice
  11. 1 TB tapioca starch, (optional for stretchier cheese when melted)

Directions

  1. Blend #1-9 ingredients together and then pour into a medium sized pot
  2. Stir and heat in pot on medium heat till it it thickens considerably without boiling. About 5-10 mins.
  3. Once the mixture has become smoother and thicker, add in ingredients #10-11 and continue simmering for 1-3 more mins.
  4. Remove from heat and pour quickly into a lightly oiled 20 oz sized bowl.
  5. Refrigerate until set up (roughly 1 hour) & use when desired. You can also freeze it for a quicker set up time (10 mins). It can be cut into slices, chunks, or be shredded.
