This recipe is delicious. A nice hint of spice and sweet. Can be made vegan. Serves 6-8.

Ingredients

  1. 1lb ground beef *add an extra pound of meat if you want the chili to be extra meaty (leave beef out if vegan)
  2. 1 lb bacon (leave out if vegan)
  3. 1 onion, chopped
  4. 29oz can diced tomatoes, with juices
  5. 15oz can kidney beans, with juices
  6. 15oz can black beans, with juices
  7. 15oz can pinto beans, with juices
  8. 12oz gluten free rotini or elbow macaroni (can be left out if you don’t want chili-mac)
  9. 1 TB minced garlic
  10. 1 tsp onion powder
  11. 1-3 TB chili powder (depends if you want mild 1TB, medium 2TB, or spicy 3TB)
  12. 1/2 tsp cumin
  13. 1/4 tsp cayenne pepper
  14. 1 tsp smoked paprika
  15. 1/3 cup brown sugar
  16. 1/2 cup cornstarch (or arrowroot) dissolved in with 1 cup beef broth (or vegetable broth if vegan)
  17. 1 cup more beef broth (or vegetable broth if vegan)

Directions

  1. Brown the meats in two separate pans, or jump to step 2 to make it vegan.
  2. Brown the onion in a lightly oiled pan.
  3. Dump all ingredients into a large crockpot and cook overnight or 6-8 hours on low.
  4. Serve with desired sides & toppings: non-dairy cheese, sour cream, guacamole, tortilla chips, or homemade cornbread here
