I love banana bread. This recipe is delicious. Serves 2 loaves.

Ingredients

  1. 1 1/3 cup sugar, OR coconut sugar
  2. 6 TB oil
  3. 4 eggs, OR instant egg replacer with 1/3 cup non dairy milk
  4. 6 bananas, smashed
  5. 2/3 cup non dairy milk
  6. 4 cups gf flour
  7. 1.5 tsp baking soda
  8. 1 tsp baking powder
  9. 1 tsp salt
  10. optional: 6-8 oz vegan chocolate chips
  11. soy-free spray oil for your bread pans

Directions

  1. Preheat oven to 350.
  2. Lightly oil 2 bread pans.
  3. Mix dry ingredients then add in wet ingredients slowly till mixture is smooth.
  4. Add in chocolate chips if desired.
  5. Pour equally into the two loaf tins and bake 55 mins or till golden brown and tooth pick comes out dry.
