I love banana bread. This recipe is delicious. Serves 2 loaves.
Ingredients
- 1 1/3 cup sugar, OR coconut sugar
- 6 TB oil
- 4 eggs, OR instant egg replacer with 1/3 cup non dairy milk
- 6 bananas, smashed
- 2/3 cup non dairy milk
- 4 cups gf flour
- 1.5 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- optional: 6-8 oz vegan chocolate chips
- soy-free spray oil for your bread pans
Directions
- Preheat oven to 350.
- Lightly oil 2 bread pans.
- Mix dry ingredients then add in wet ingredients slowly till mixture is smooth.
- Add in chocolate chips if desired.
- Pour equally into the two loaf tins and bake 55 mins or till golden brown and tooth pick comes out dry.
